JBT seafood solutions: netting profits for processors

For fish and seafood processors, in common with customers across protein industries, rapidly rising gas prices have made apparently cheaper freezing options very costly. But how to beat the gas price-crisis while maintaining a product that’s superior in both quality and appearance?

Long-term gains
Liquid Nitrogen prices in Europe have soared in 2021-22, with the increase putting pressure on companies using cryogenic – or gas-based – freezers.

“Although cryogenic freezers have a lower initial investment cost than mechanical freezers, there’s a high running cost for the gas, and this is especially true at the moment,” explains Martin Andersson, JBT’s Application Manager for Value Stream Spiral Freezers. “With a mechanical system like the ADVANTEC freezer, there is a bigger investment at the start, but companies reach a break-even point within a few years, at which point it becomes considerably cheaper.”

Smoother processing
In the case of fish and other seafood, the freezing process itself is not without its challenges, and this is another area where the ADVANTEC offers a distinct advantage. “If you freeze thinner products like fish, you want them to come out without wrinkles,” says Andersson. “With our knowhow and experience we know how to get you the best product appearance.”

Andersson says the ADVANTEC can also be combined for effective glazing. “Almost all seafood is glazed; you need to put some water on it, so the surface doesn’t dry out,” he explains. Fish can quickly become rancid on just the surface but it spoils the product, so you want to glaze. We can assist the customers to find the right solutions and we can do tests for them in our lab to make sure they get the end results they want.”

Reliable solutions
“At JBT, we have very reliable and hygienic freezing solutions that keep customers’ businesses running as they should,” Andersson adds. “If you choose the wrong freezer or process, you can end up with a poor or dry product quality. Whereas, with the ADVANTEC impingement freezer, you will get a juicier and fresher product.”

JBT’s Frigoscandia FLoFREEZE: how fast freezing boosts yield and quality

When it comes to freezing fruits, vegetables or even fish, pasta and rice, the problem of products sticking together into a homogenous mass can be all too common. But did you know that Individually Quick Frozen (IQF) technology from JBT’s Frigoscandia FLoFREEZE® can overcome these pitfalls and deliver improved product quality and yield?

Lars Michael Svensson, JBT Regional Sales Support Manager, here outlines some of the key advantages offered by the FLoFREEZE and provides tips on achieving consistently optimum performance.

One of the first advantages you have with the FLoFREEZE is its flexibility: you can quick-freeze a huge range of products with the same machine. For example, you can run small fish one day, pasta the next, rice the third and strawberries the fourth, and you can do all that with the same FLoFREEZE system.

Efficiency with gentle handling: the JBT Frigoscandia FLoFREEZE

At the same time and thanks to IQF innovations, the quality of the product coming out of the freezer is fantastic from all the customer feedback we have received. It is also a very efficient way of freezing products. By freezing fast, water loss is far lower, so you can achieve a very good yield. And thanks to its speed, the footprint of the FLoFREEZE is substantially smaller than a standard freezer system, which would need to be far larger to handle similar volumes. 

Product quality is maintained thanks to gentle handling which allows delicate products such as berries, fresh spices and tropical fruits to be maintain their fresh appearance and flavor characteristics.

True fluidization
So how does the FLoFREEZE work? IQF technology uses an airstream to freeze products one-by-one. This allows for the movement of air around each product to separate them, so they don’t stick together. The FLoFREEZE provides true fluidization, using a patented air flow system that separates and freezes the most delicate products, while simultaneously fulfilling the industry’s toughest requirements for hygiene, economy and user-friendly operation.

Products typically run through the FLoFREEZE are smaller dimension foods that can fluidize, such as fruits, berries, vegetables, pasta and shrimps. The products float in the airstream, behaving like a liquid, which allows us to individually freeze the surfaces, so they won’t stick together.

Optimizing freezing
But how can customers get the most out of this technology? JBT offers a wealth of experience and knowhow that can be utilised to support customers in overcoming difficulties and finding the right solution for their specific products. With knowledge based on 60 years’ experience in IQF freezing and food processing, our food processing technologists will help guide and adapt processes according to customers’ production needs. 

Effective solutions
Both inside and entering the machine, we have options to separate products depending on shape, dimensions and temperature. A vibratory shaker feeds the product into the machine, so you get an even-flow. Then inside the machine, on the first IQF track – where we carry out crust freezing – customers have the option of running an agitation process, meaning the product is moved back and forth rapidly to separate it.

The FLoFREEZE allows you to restrict the amount of air at entrance, to pre-cool the product before fluidization begins. Further, we have options to control air coming through the product bed: instead of a constant flow, we have a pulsator which opens and closes fast to variate the airstream causing the product to move up and down.

Once it moves onto the second belt, the product is taken down to -18C. Thanks to the process carried out in the first stage, the product can move to this second belt without having risk of sticking together and creating lumps. So using all these options, we help customers get the most out of their FLoFREEZE and enable them to benefit fully from the system’s flexibility, speed and undoubted effectiveness.

Zamil Food: how JBT aided company’s leap to the big time

In 2013, Zamil Food in Saudi Arabia was a small, low-producing company with no significant position in a very competitive market. By investing in the right people and the right partner of equipment solutions, the business went from almost no production into one of the big players within the food processing industry in the Middle East. And according to Mr. Yanal Halasa, General Manager at Zamil Food Industries, JBT has played a significant role in their journey to success. 

Zamil Food is a business-to-business wholesaler processing poultry, red meat, dairy, and plant-based products. Since the company started in 1978, the production has been small-scale, focusing on the local market. Mr. Halasa launched an ambitious expansion with machinery from JBT that could realize higher capacity, hygiene criteria, and quality to meet the high-end market demand.

They chose to trust JBT’s expertise and have never looked back since. The investment quickly resulted in large contracts with high-profile retail companies in the local and regional markets. Zamil Food succeeded in making a turnaround, and in 2021, the factory reached its total capacity of 1350 tonnes per month.

The first significant investment with JBT was a full multi-purpose further processing line, including sophisticated solutions for coating, frying, cooking, and freezing. Satisfied with the performance of the machinery, Zamil Food looked to further improve its products and production line. The solution was found in JBT’s DSI Waterjet portioning system, which achieved a better product, met hygiene criteria while reducing staffing and product waste, saving time, and optimizing sales. 

Zamil Food was one of the first food processing companies in the Middle East to invest in JBT’s high-technology automated portioning system. They believe that the decision has contributed to their increased market shares. The DSI portioning system provides the existing line with increased yield, accuracy, and capability to meet the high profile quick service restaurant (QSR) group’s demand with a short investment payback time. 

Maintaining trust
According to Mr. Halasa is the partnership with JBT has helped the company maintain quality at all times in order to build trust with clients. “While having discussions with colleagues, I have compared JBT to a Rolls Royce,” he says. “JBT has the highest product quality and service level. Whenever we need a machine, we just call our sales representative. And when we need to stand to a higher level in our production line, JBT knows how to succeed.”

Zamil Food provides clients with a complete solution from concept development to a final product ready to market. The added capacity from JBT’s machinery has made it possible to target large food producers. For several clients, Zamil Food works as the backup kitchen. “The flexibility of JBT’s machines has made it possible for us to cope with the large variety of applications that we need to run. We must be able to handle quick turnarounds to keep our promise to the clients,” says Mr. Halasa. 

Service and support
JBT supports Zamil Food with project management, installation, implementation, and training. The high-tech, connected machinery enables instant remote support and a continuous overview of the machines’ performance. JBT’s service technicians make regular inspections and keep spare parts in store, managing the risk for lengthy and costly breakdowns. 

“We need quick service to keep downtime to a minimum,” Mr. Halasa explains. “In 2017 we signed a PRoCARE service agreement with JBT, which has minimized our corrective maintenance cost and maximized our running time. PRoCARE has kept the machines running to our requirements and the manufacturing standard, enabling us to utilize the machines fully and keep optimal performance at all times.

“An example of JBT’s dedication and support was shown when we experienced a last minute power supply change related to purchasing a new deep fryer. This issue led to a delay in delivery, but JBT supported us to have the fryer delivered by air to meet our production deadlines. Our partnership with JBT builds on trust; they always stick to their offers and commitments. They even exceed our expectations.”

Future projects
Zamil Food plans to expand the business further and tie stronger bonds with local producers in the coming years. The partnership with JBT will continue, and currently, there are several new machines on their way to Zamil Food’s production sites that will increase their capacity by 40%. “JBT is a strategic partner that provides the best machines, solutions, and support,” Zamil Food concludes.

La capacité de JBT à fournir des solutions de production durables et décarbonées sera l’un des messages clés délivrés aux clients lors du Salon CFIA 2022 Rennes du 8 au 10 mars 2022. De plus, JBT présentera des systèmes sur mesure pour les aliments d’origine végétale pour permettre aux transformateurs de tirer parti d’une tendance qui prend de l’essor en Europe.

L’intérêt pour le développement durable, combiné à la nécessité de réaliser des économies d’énergie, s’est considérablement accru en France et dans toute l’Europe ces dernières années, sous l’impulsion des consommateurs et des transformateurs. 

Lors de sa participation au Salon CFIA, JBT affichera sa capacité à fournir une production décarbonée sous la forme du nouveau four électrique TwinDrum, une solution qui permet aux transformateurs d’utiliser des sources d’énergie durables. Autre élément clé de la stratégie de JBT en faveur du développement durable, l’accent accordé à l’accroissement de la capacité de l’usine de plus petite taille. Exemple clé de cette stratégie : le GYRoCOMPACT GC70 de Frigoscandia, une solution qui apporte durabilité tout en augmentant la capacité dans un espace plus petit. 

Alternatives à la viande
L’alimentation végétalienne est une autre tendance importante sur le marché français, avec un nombre toujours croissant de demandes d’alternatives à la viande, selon Philippe Barillet, directeur des ventes de JBT pour la France et la Belgique. « J’estime qu’entre 50 et 70 % de nos clients recherchent au moins une alternative végétalienne », confie-t-il. 

Pour aider les clients à trouver la solution végétale qui leur convient le mieux, M. Barillet explique que JBT travaille en étroite collaboration avec ses clients dans ses centres de recherche et de technologie internationaux

La plateforme d’optimisation des performances basée sur le cloud iOPS de JBT, une technologie sécurisée d’analyse du big data qui recueille et analyse les performances des équipements et des processus de JBT en temps réel, constitue le point d’orgue. « iOPS rassemble les données de toutes les machines connectées pour fournir des données de production et de service directement sur le téléphone du client », ajoute M. Barillet.
